SPANSPEK AND BLUEBERRY BREAKFAST BOWLS
Refreshing spanspek bowls brimming with blueberries are a fresh start to these sweltering summer days. Or even enjoyed as a light “pick me up” during the day that is both cooling and packed with feel good nutrients.

- Yields: 4 servings
2 Spanspek, halved and deseeded
1 1/2 cups cream cheese
1 cup full cream yoghurt
4 tbsp honey
100g almonds, roughly chopped
Mint leaves for garnishing
Edible flowers for garnishing
- Mix the cream cheese, yoghurt and honey together in a bowl.
- Spoon this mixture into each deseeded spanspek equally.
- Dot the blueberries equally over the top of each spanspek and sprinkle them with the chopped almonds.
- Garnish, with mint leaves and edible flowers and serve immediately.
A little drizzle of honey can add to the sweetness if you find the fruit a little tart.
