Refreshing spanspek bowls brimming with blueberries are a fresh start to these sweltering summer days. Or even enjoyed as a light “pick me up” during the day that is both cooling and packed with feel good nutrients.

  • Yields: 4 servings


2 Spanspek, halved and deseeded

1 1/2 cups cream cheese

1 cup full cream yoghurt

4 tbsp honey

300g blueberries

100g almonds, roughly chopped

Mint leaves for garnishing

Edible flowers for garnishing


  1. Mix the cream cheese, yoghurt and honey together in a bowl.
  2. Spoon this mixture into each deseeded spanspek equally.
  3. Dot the blueberries equally over the top of each spanspek and sprinkle them with the chopped almonds.
  4. Garnish, with mint leaves and edible flowers and serve immediately.

A little drizzle of honey can add to the sweetness if you find the fruit a little tart.
